- 2 sticks cinnamon (darchini)
- Small piece of nutmeg(jaifal)
- 4/5 cardamom(hari eilaichi)

- 1 tbsp dry coriander seeds(sokha dhania)
- Mandi Marination
- 2 kg Mutton leg
- 4 tbsp vinegar(sirka)
- 2 tbsp white pepper(safaid mirch)
- 1 tbsp salt
- 2 tbsp ginger,garlic paste
- 2 tbsp mandi masala
- 4 tbsp oil
- For Rice
- 1 kg Basmati Rice
- 1/2 cup oil
- 1 stick cinnamon (darchini)
- 1 tsp cumin (safaid zeera)
- 1 tsp black cumin(kala zeera)
- 4/5 black pepper corn(sabut kali mirch)
- 2/3 cloves(loung)
- 2 star anise(badyan)
- 1 tbsp ginger,garlic paste
- 1/2 cup yoghurt
- 1 &1/2 tbsp salt
- 1 tbsp sugar
- 8/10 raisins(kishmish)
- 8/10 almonds(badam)
- leaves Green chillies, mint
- For frying Mandi
- 2 tbsp butter
Steps to make to make Mutton Mandi
- First grind all spices of Mandi masala


- Make deep cuts on mutton

- Now marinate mutton with vinegar,white pepper,salt,ginger garlic paste,salt and grind mandi masala

- Massage well cover it and marinate minimum 4/5 hours



- After 4/5 hours put oil in a pot and keep mutton in it


- Fry it 5 minutes then turn it other side


- Now put 1 glass water.cover it and cook 1 hour on slow flame


- After 1 hr turn it other side and cook 1 hr more


- Now again after 1 hr mutton tender nicely now we fry mutton in butter and keep mutton' masala a side


- Put mutton mandi on greased oven tray and put some butter on it


- And bake it on preheated oven at 200 °c for 5 minutes
- For rice put oil in degcha

- Add some sliced onion and dry spices and fry well


- Now add ginger garlic paste and fry it until change in golden colour


- Add remaining mandi masala which we keep aside with 1.5 ltr water

- When water boiled add soaked rice and salt in it mix well and cook it on high flame

- When water began to dry up add sugar mix it again cook it until water dry compeletly
- Now add soaked raisins amd almonds in rice


- Now put green chillies and mint leaves on rice and cover it with lid and cook 15 minutes more on low flame

- After 15 minutes rice cooked nicely
- It's time to serve Mutton Mandi
