Ingredients and spices that need to be Prepare to make Mutton Shami Kebab with Mini Paratha and Yoghurt dip:
- For Shami Kebab
- 1 1/2 cup Boneless mutton cut into small chunks
- 1/2 cup dried Chana Dal soaked for few hours
- 1 small onion
- 10-12 Garlic cloves
- 2-3 inches Ginger
- as per taste Salt
- 1 small Dagad Ful / Pathar ke ful
- 1 small cinnamon stick
- 3 cloves
- 5 Green Cardamom
- 1/2 Tsp Black pepper
- 1/2 Tsp White pepper
- 1/2 Tsp Cummin seeds
- 1/2 Tsp coriander seeds
- 1/4 tsp Turmeric powder
- 1/2 Tsp Kashmiri Red chilli powder
- 1 cup Water
- as needed Small amount of coriander leaves chopped
- as per taste Green chillies chopped
- 1 Egg
- As needed Oil for shallow frying
- For Yogurt Dip
- 1 Small pc of onion
- 3-4 Garluc cloves
- 1/2 inch Ginger
- as per taste Few Green chillies
- Handful cilantro
- Handful mint
- 1/2 cup plain yoghurt
- 1 pinch Black salt
- 1/4 tsp Raita Masala powder
- as per taste Salt
- As needed- Juice of one small lemon
- For Paratha
- 2.5 cups Maida
- 2 tbsp milk powder
- 1 Tsp Sugar powder
- 1 pinch salt
- 2 tbsps Desi Ghee
- as needed Lukewarm water
- as Required Desi ghee / veg oil to shallow fry and cook the parathas
- Salad
- 1 Onion sliced into rings
- 1 Whole Fresh Chillies
- 1 Lemon Wedges
- 1 Tomato (optional)
- as Required Black pepper and black salt or your favourite seasoning
Instructions to make to make Mutton Shami Kebab with Mini Paratha and Yoghurt dip
- Put all the ingredients except egg, coriander/ cilantro & chillies for the kebab in a pressure cooker. Pressure cook for 8-10 minutes, in my small pressure cook it takes about 20 short wishtles for the meat and Dal to cook and soften up.



- Let it cool and release pressure of its own. Drain the excess water (don't throw add into your curry or Dal), let it cool completely before you grind.



- In the mean time, mix all the ingredients for the parathas, add water as needed and knead a medium soft dough, cover and let it rest for at least half an hour.
For Yoghurt dip:
In a mixer grinder jar, add in all the ingredients for the Yoghurt dip except the yoghurt / curd, grind these ingredients first and then add yoghurt and blend, check salt and tanginess and adjust as per taste.
Prepare the salad to be served with your favourite seasoning.
- Once the meat & Dal mixture has cooled, grind and make it into a paste in the mixture grinder or the Sil Batta in small batches. Put everything in a bowl, check salt. Now add the chopped coriander/ cilantro, Chillies, egg and salt if needed. Mix thoroughly and take a fistful of the meat paste and shape it into flat rounds.



- Heat oil to shallow fry the kebabs. Once the kebabs are shaped, shallow fry on both sides till it turns golden brown in colour. Do not overcrowd the pan. Once fried, keep it on a kitchen paper towel to absorb the excess oil.
Simultaneously you can prepare the mini parathas on the separate tawa. Take small lemon size dough balls, flatten it and put it on a hot tawa and cook the way you cook any other parathas, by flipping on both sides and applying ghee or oil to shallow fry it.

- Once the kebabs and parathas are ready serve hot with the yoghurt dip and Salad.
