- 1/2 cup rice
- 1 Tbsp Oil
- 1 bay leaf
- 2 cardamom
- 1 cloves
- 1" inch cinnamon stick
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 medium onion chopped
- 1 green chili chopped
- 4/5 curry leaves
- 1 tsp ginger-garlic paste
- 2-3 medium tomatoes chopped
- as per taste Salt
- 1/4 tsp turmeric powder
- 1/4 tsp garam masala
- 1/4 tsp coriander powder
- 1/4 tsp black pepper powder
- 1/2 tsp red chili powder
- 1 1/2 Cup water for cooking tomato rice
- As needed Few chopped Coriander leaves to garnish
- Ingredients for Boondi Raita:-
- 1/4 cup plain namkeen boondi
- 1/2-3/4 cup warm water
- 3/4 cup Curd
- 1/4 tsp chaat masala
- 1/4 tsp cumin powder
- 1/4 tsp red chilli powder
- 1/4 tsp black pepper powder
- 1 tsp chopped mint leaves or Coriander leaves
- as per taste black salt or salt
Instructions to make to make Tomato Rice with Boondi Raita
- For preparing Tomato Rice:-
Wash the rice. Then soak it in water for 20 mins. After 20 mins, remove the water and set rice aside.


- Heat oil in a pan over medium flame. Next add bay leaves, green cardamom, cloves, cinnamon sticks, cumin seeds, mustard seeds. When mustard and cumin crackle, then add chopped onion, green chillies and curry leaves.
Cook onions until translucent. Then add ginger-garlic paste. Mix well.


- Add chopped tomatoes and sautē for 1-2 mins. Cover and cook for 3 -5 mins until tomatoes turn mushy. Now add turmeric powder, garam masala, coriander powder, black pepper powder, red chilli powder and salt. Mix well for 2-3 mins.



- Tomato masala becomes mushy (soft).
Then add the drained rice and mix well with tomato masala. Add 1 and 1/2 cup water. Also taste the water for salt if needed.


- Cook first over high flame until boiling starts, then turn the gas on low-medium flame and cook until the water absorbs and the rice is almost cooked. Now switch gas to lowest flame. Cover with lid and simmer for 5 mins.
If you want more soft rice, add 2 to 4 tbsp water or as required. Close the lid and cook for another 7 to 8 mins.


- Check if all the water in the tomato rice is absorbed and rice is cooked completely before switching off the gas. Sprinkle few chopped Coriander leaves.



- For preparing Boondi Raita:-
First, warm the water in the pot. Turn off the gas and then add bundi to that warm water. Soak the bundi for at least 10 minutes.
Gently press the bundi with your hand and squeeze out the water without mashing it.


- In a bowl, whisk the curd. Then add bundi in it and mix together.



- Next add chaat masala, cumin powder, red chilli powder, black pepper powder, chopped mint and salt. Mix well.
Refrigerate boondi raita for at least 10 mins before serving.
Garnish mint leaves or cilantro to Boondi Raita.


- Serve with Tomato Rice with cool Boondi Raita.
