Steps to make to make Soya Nuggets fried rice

  1. Slice medium all veggies and assemble all ingredients
  2. Soak rice for 1 hour and then cook rice and keep aside.
  3. Boil soya nuggets with little salt, squeeze water from nuggets and marinade for 30 - 40 minutes in curd by adding salt, cumin powder, haldi powder, red chilli powder and garam masala.
  4. In pan add little ghee and roast cashews raisins for few seconds and keep aside.
  5. In same pan add ghee, wait for medium heat, then add all whole spices, sauté for 1-2 minute.
    Then add all veggies along with slit or chopped green chilli and ginger.
  6. Stir fry under medium flame till the veggies get soft, then add the marinated soya nuggets + salt and then sauté for 2-3 minutes till water from curd evaporates.
  7. Then add cooked rice, mix gently, add required salt, sugar, garam masala and give a nice mix. Stir fry for 3-4 minutes and lastly add cashews + little ghee + raisins and mix gently and keep under cover 2-3 minutes under low flame.
  8. Soya Nuggets fried rice is ready to serve.
    I served with Cholar Dal / Bengal Gram Dal, tomato n Olive Chutney and plain curd.
