  22. For gobhi
  23. 1 cauliflower, chopped
  24. 3 chopped potatoes
  25. 2 tbsp mustard oil
  26. 1 tsp jeera
  27. 2 tbsp finely chopped ginger green chillies
  28. 1 tsp red chilli powder
  29. 2 tsp dhaniya powder
  30. 1/4 tsp haldi powder
  31. 1 tsp amchur powder
  32. Pinch garam masala
  33. to taste Salt
  34. For Bhature
  35. 1 cup maida
  36. 1/4 cup curd
  37. 1 tsp fruit salt
  38. 2 tbsp oil
  39. to taste Salt
  40. Water as required
  41. Oil for deep frying
  42. For Jeera Rice
  43. 1/2 cup rice, washed and soaked for half an hour
  44. 1 cup water
  45. 1 tbsp ghee
  46. 1 tsp jeera
  47. 2 cloves
  48. 1 small cinnamon stick
  49. to taste Salt

Steps to make to make Chole, Bhature, Jeera Rice and Aloo Gobhi

  1. First prepare the dough for bhature, in a mixing bowl combine together maida, oil, curd, fruit salt and salt, mix well. By adding little water knead a smooth dough, cover and keep it for 3 - 4 hours for fermentation.

Cover and cook on low heat, until becomes soft, then add red chilli, dhaniya, amchur powder and garam masala. Roast for 5 - 7 minutes on lie heat. It is ready to serve.
  5. Heat ghee in a pan and add jeera, cloves and cinnamon, let them splutter, then add soaked rice. Roast on low heat, stirring continuously with light hands, until the ghee coats the rice properly. Then add salt and water, cover and cook, until all the moisture evaporates and the rice is properly cooked. It us ready to serve.
  6. Now everything is ready, so we prepare the bhature. Heat oil for deep frying, first on high heat, then make the flame medium. Make balls from the dough, roll it and slide slowly in the hot oil. Fry it until becomes fluffy and light brown. In this way maje all the bhaturas.
  7. For serving, take out chole in a bowl, aloo gobhi in another bowl, jeera rice in another bowl, bhature in a serving platter along with onion rings. Garnish with some chopped coriander leaves.
